Yoghurt, berries & toasted seeds
An unhurried breakfast with a little crunch. Choose plain yoghurt and let the berries do the talking.

Start with the label
Plain yoghurt varies between brands. Check the ingredient list and the carbohydrate figure per 100 g rather than assuming that every thick yoghurt has the same composition. The recipe has no added sweetener; dairy and berries still contain naturally occurring sugars.
Change with the season
Use fresh raspberries when available, or thaw frozen berries according to their packaging. Keep the toasted seeds separate if preparing ingredients ahead. This preserves their crunch and lets each person add the quantity they prefer.
Method
- Toast the seeds in a dry pan over low heat for 2-3 minutes, moving them frequently. Tip onto a plate and leave to cool.
- Wash fresh berries and cut larger strawberries into pieces.
- Divide the yoghurt between two bowls. Add the fruit, cooled seeds and lemon zest. Serve straight away.
