Choose a starting point
A satisfying bowl is easier to assemble when you begin with one main ingredient. Try cooked eggs, leftover cooked chicken or tofu, then add vegetables with different textures. Crunchy cucumber and tender roasted courgettes work differently and make the bowl more interesting.
Keep the dressing separate
Mix olive oil with lemon juice or vinegar in a small container. Add mustard or herbs according to taste, checking labels for allergens. Carry it separately so that delicate leaves do not wilt before lunch.
Use a smaller shortlist
You do not need six vegetables in every bowl. Two or three ingredients, plus a protein source and a dressing, are often easier to prepare and use up. When reducing starchy ingredients, pay attention to your own needs rather than treating a photograph as a portion prescription.
Before leaving home
Use an insulated bag with a cold pack for chilled ingredients and refrigerate on arrival. Follow product storage instructions and local food-safety guidance. Leftovers need the same care whether or not a meal is lower in carbohydrate.
