Begin with the bake

Decide what you want to make before choosing substitute ingredients. A crisp biscuit, a soft cake and a loaf need different structures. A lower-carbohydrate recipe may use nuts, seeds, eggs or dairy, which all bring their own flavour and allergen considerations.

Sweetness is not just flavour

Sugar contributes bulk, browning and moisture as well as sweetness. Alternative sweeteners do not all behave alike. Follow a recipe that specifies the product and quantity, and check the manufacturer instructions rather than swapping every sweetener gram for gram.

Weigh, then observe

Use a digital scale and check whether your oven runs hot. Take notes on the tin dimensions and cooking time. A smaller tin changes the depth of the batter and may need a different time. Visual cues and texture matter alongside the timer.

Be clear about claims
