Buy for the meals you will actually cook, with room for a good-looking vegetable or two.

Start with local availability
Seasonal availability changes across the UK and Europe. The same vegetable may have different harvest windows depending on where it is grown. Read origin labels and use local market information instead of treating a single calendar as universal.
Choose a useful mix
Buy some ingredients for immediate use and a few that keep more easily. Tender leaves may be best early in the week; a firm cauliflower or cabbage gives more flexibility. Check condition, packaging and storage guidance when deciding quantities.
Keep alternatives open
A recipe does not always require the exact variety in the photograph. Courgettes, mushrooms and leafy greens can often be used in different combinations, but their moisture and cooking times differ. Adjust the method rather than simply swapping names.
Write a meal, not a wish list
A short list linked to two or three planned meals is easier to finish. Add only the herbs or dressings those meals need. Lower-carbohydrate cooking can still be varied without filling a cupboard with specialist ingredients.
